Ingredients

  • 1 Tbs. olive oil
  • 2 Tbs. butter, divided
  • 3 red yellow and/or orange bell peppers, seeded and sliced, 3 cups
  • 1 red onion, sliced, 1 cup
  • 2 cloves garlic, thinly sliced
  • ½ tsp. dried basil
  • ½ tsp. kosher salt
  • ¼ tsp. pepper

Instructions

  • Melt olive oil and 1 Tablespoon butter in large non-stick skillet over medium-high heat.
  • Cook peppers, onion, garlic, basil, kosher salt and pepper until tender-crisp, 10-12 minutes, stirring occasionally.
  • Stir in remaining 1 Tablespoon butter and serve.

Notes

Makes 4 servings.

  • You can make this recipe with just one color of bell peppers
  • Want a touch of heat? Add a pinch of crushed red pepper flakes
  • For added flavor, stir in a touch of balsamic vinegar before serving
Substitutions
  • Substitute white onion or yellow onion for the red onion
