Roasted Cinnamon Apples ‘n Chicken

- 3 Gala and/or Granny Smith apples , cored, each cut into 8 wedges
- 1 large onion , sliced 1/2″ thick, 1 1/2 cups
- 1 head garlic , peeled
- 2 Tbs. butter , melted
- 3/4 tsp. ground cinnamon , divided
- 3/4 tsp. dried marjoram , divided
- 3/4 tsp. kosher salt , divided
- 1/4 tsp. cracked black pepper
- 1 (7 lbs.) whole roaster chicken
- 1/4 tsp. garlic powder
Preheat oven to 350F.
In bowl combine apples, onion, garlic cloves, butter, 1/4 tsp. cinnamon, 1/4 tsp. marjoram, 1/4 tsp. kosher salt and cracked black pepper; reserve.
Season chicken with remaining 1/2 tsp. cinnamon, 1/2 tsp. marjoram, 1/2 tsp. kosher salt and garlic powder.
Roast the chicken for 45 minutes and then add the reserved apple mixture in roasting pan arranging it around chicken.
Roast the chicken and apples an additional 45 minutes or until a meat thermometer reads 165F and the chicken juices run clear,
Let the chicken rest for 10 minutes before serving. This allows for the juices to settle and the internal temperature to rise.
