Instructions

  • Combine flour, coconut sugar, pumpkin pie spice, kosher salt and baking powder.
  • Stir in egg and pumpkin puree.
  • Add seltzer and stir until just blended.
  • Coat large non-stick skillet or griddle with cooking spray and heat over medium-high heat.
  • Cook pancakes, turning once, until cooked through.
  • Serve with butter and maple syrup, of course!

Notes

Swirls of Flavor Recipe Tips
    • This recipe makes 2 1/3 cups batter/about 12 pancakes (3-inches each)You can easily make these pancakes ahead, refrigerate and then reheat in a 200F oven or in the microwave
    • I like to arrange pancakes in a single layer on a baking sheet when reheating them in the oven
    • When reheating pancakes in the microwave be sure to use a microwave-safe plate
    • To make pumpkin banana pancakes just stir mashed bananas into the batter and cook
    • For pumpkin chocolate chip pancakes, stir mini chocolate chips into he batter and cook. Be sure to use mini chips!
    • Sometimes I add a scoop of protein powder into the homemade pancake batter and make pumpkin protein pancakes
