Ingredients

  • 2 Tbs. olive oil
  • 2 Tbs. red wine vinegar
  • 2 Tbs. lime juice
  • 1 tsp. lime zest
  • 1 tsp. sugar
  • 1 tsp. kosher salt
  • 1/4 tsp. pepper
  • 8 ounces (1 1/3 cups) orzo pasta, cooked, drained and cooled down with cold water
  • 2 peaches, pitted and chopped, 2 cups
  • 2 cups arugula
  • 1 cup blueberries

Instructions

  • In serving bowl combine olive oil, vinegar, lime juice, lime zest, sugar, kosher salt and pepper until blended.
  • Stir in orzo, peaches, arugula and blueberries, tossing until evenly coated.

Makes 7 cups.
