  • Arrange chicken in bottom of slow cooker.
  • Combine sweet chili sauce and crushed pineapple with its juice and pour over chicken.
  • Cook 6-8 hours on low or 3-4 hours on high.
  • Stir in fresh lime juice and top with scallions and cilantro and serve with lime wedges.
  • Serve, if desired, with hot cooked rice or rice noodles.

Makes 8 cups.
* Sweet Chili Sauce can be found in the condiment or ethnic section of your grocery store. Frank's and A Taste of Thai are two popular brands that make Sweet Chili Sauce.

  • Add a pinch of red pepper flakes for a hint of heat
  • Make this recipe with a combination of boneless chicken breasts and boneless chicken thighs
Substitutions
  • you can use boneless chicken thighs in place of the boneless chicken breasts
  • change up the flavor and use orange in place of the lime
To cook this recipe in an instant pot:
  1. Place ingredients in instant pot as directed in recipe and set to slow cooker setting.
  2. For slow cooker low, cook on normal setting 7-8 hours.
  3. For slow cooker high, cook on high setting 3-4 hours, adding an extra 15 minutes for each hour.
