Blueberry Simple Syrup

  • In a medium saucepan, combine the sugar and water over medium heat. Bring to a simmer and cook until the sugar dissolves, about 5 minutes.
  • Add the blueberries and bring to a gentle boil over medium-high heat.
  • Cook until the blueberries have burst, stirring occasionally, about 7 minutes
  • Once all the blueberries have burst and the mixture is syrupy, remove from heat and cool for about 30 minutes.
  • At this point I like to use an immersion blender to incorporate as many of the skins as possible.
  • Strain out the solids through a fine mesh sieve, discarding the solids.
  • Transfer the simple syrup to a glass jar or bottle and refrigerate.
