White Castle Casserole

Ingredients

  • 2 tablespoons butter
  • 1 1/2 cups chopped onion , divided
  • 1 1/2 pounds ground beef
  • 3 Tablespoons onion soup mix
  • 1 package Hawaiian rolls
  • 1/3 cup ketchup
  • 6 slices American cheese
  • 1/2 cup sliced dill pickles

Instructions

  • Preheat oven to 350F and coat a 7-inch x 11-inch baking dish with cooking spray.
  • In a large nonstick skillet, melt butter over medium heat and cook 1/2 cup onion until tender and golden. Set aside.
  • In the same skillet, cook the ground beef, the remaining 1 cup chopped onion and onion soup mix until beef is browned and onion is tender.
  • Place the roll bottoms in the prepared baking dish.
  • Spoon the ground beef mixture evenly over the rolls.
  • Top with the reserved cooked onions and any butter that they cooked in, ketchup, cheese, pickles and the roll tops.
  • Cover with aluminum foil and bake for 25 minutes or until heated through.
  • Brush with melted butter and sprinkle with chopped parsley, if desired.
