Blueberry Vinaigrette

Blueberry Vinaigrette is a homemade salad dressing recipe made with fresh blueberries, balsamic vinegar, fresh ginger, Dijon mustard, olive oil and lime. This blueberry salad dressing will be a favorite dressing on your summer salad.

Instructions

  • Combine blueberries, vinegar, honey, Dijon and ginger and, using an immersion blender, puree until blended.
  • Gradually add olive oil and puree until combined and creamy.
  • Stir in lime zest.

Makes about 1 1/4 cups of salad dressing

  • I love to store my salad dressings tightly sealed in mason jars and just give them a quick shake before using.
  • Add minced fresh jalapeno for a hint of heat
  • Drizzle this fruity dressing over grilled chicken, beef or fish.
Substitutions
  • You can substitute maple syrup for the honey
  • I prefer using extra virgin olive oil when making a homemade salad dressing, but you can also use olive oil
  • I love this blueberry dressing when it's made with fresh blueberries but you can certainly use frozen blueberries too!
  • Apple cider vinegar can be substituted for balsamic vinegar, however, you may want to increase the sweetener
  • You can substitute lemon for the orange
