Skillet Chicken Fajitas
Skillet Chicken Fajitas is an easy, quick, and super satisfying meal. Homemade fajita seasoning flavors chicken and vegetables and cooks to perfection in a cast iron skillet. Delicious when served on warm tortillas with guacamole, cilantro and lime wedges.

- 2 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1 tsp kosher salt
- 1 pound boneless skinless chicken breasts
- 2 Tbsp olive oil
- 1 red bell pepper thinly sliced
- 1 yellow bell pepper thinly sliced
- 1 orange bell pepper thinly sliced
- 1 poblano pepper thinly sliced
- 1 yellow onion thinly sliced
- 8 flour tortillas warmed
- Serving suggestions: guacamole, cilantro, lime wedges
In a small bowl, combine chili powder, paprika, cumin, garlic powder and kosher salt.
Season the chicken with 4 teaspoons of the spice mixture.
Heat oil in a cast iron skillet over medium heat.
Cook the chicken until cooked through and the internal temp reaches 165 degrees, turning once. Remove the chicken from the skillet.
Meanwhile, toss peppers and onion with the remaining spice mixture and add the vegetables to the same skillet.
Cook the peppers and onion until they are tender, 7-8 minutes, stirring occasionally.
While the vegetables cook, slice the chicken into thin strips.
Add the sliced chicken into the skillet and mix thoroughly. Remove from heat.
Fill the warm tortillas with the chicken fajita filling. Serve with guacamole, cilantro and lime wedges.

- Be sure to thinly slice the peppers and onion so they are all the same thickness. This ensures that they will cook evenly together.
- Be sure to remove the seeds from the bell peppers
- Add a jalapeno for added heat
Substitutions
- You can substitute beef for the chicken. Flank steak or sirloin steak will both work well in this recipe.
- Taco seasoning can be substituted for the seasonings in this recipe
- Feel free to use just one color of bell peppers
- You can make this recipe in a large nonstick skillet if you don’t have a cast iron skillet
- Paprika can be substituted for the smoked paprika, however, you will lose the smoky flavor the smoked paprika imparts
