Ingredients

CITRUS SALSA:

  • 2 Sweet Scarletts Texas Red grapefruit , sectioned and chopped, 2 cups
  • 2 Tbs. minced red onion
  • 1 jalapeno , seeded and minced, 1 Tablespoon
  • 2 Tbs. chopped cilantro
  • 1 Tbs. fresh lime juice
  • 2 tsp. sugar
  • 1 tsp. olive oil
  • 1/4 tsp. kosher salt

CITRUS SALSA:

  • In bowl combine grapefruit, red onion, jalapeno, cilantro, lime juice, sugar, 1 tsp. olive oil and kosher salt; set aside.

ANCHO SALMON:

  • In small bowl combine smoked paprika, ancho chile powder, garlic powder and kosher salt.
  • Season tops of salmon with spice mixture.
  • In large non-stick skillet heat 1 Tbs. oil over medium-high heat. Cook salmon, seasoned side down, until lightly browned, about 3 minutes. Turn and cook until opaque and cooked to desired doneness.
  • Serve salmon with grapefruit salsa.
