CITRUS SALSA:
- 2 Sweet Scarletts Texas Red grapefruit , sectioned and chopped, 2 cups
- 2 Tbs. minced red onion
- 1 jalapeno , seeded and minced, 1 Tablespoon
- 2 Tbs. chopped cilantro
- 1 Tbs. fresh lime juice
- 2 tsp. sugar
- 1 tsp. olive oil
- 1/4 tsp. kosher salt
CITRUS SALSA:
In bowl combine grapefruit, red onion, jalapeno, cilantro, lime juice, sugar, 1 tsp. olive oil and kosher salt; set aside.
ANCHO SALMON:
In small bowl combine smoked paprika, ancho chile powder, garlic powder and kosher salt.
Season tops of salmon with spice mixture.
In large non-stick skillet heat 1 Tbs. oil over medium-high heat. Cook salmon, seasoned side down, until lightly browned, about 3 minutes. Turn and cook until opaque and cooked to desired doneness.
Serve salmon with grapefruit salsa.
