Slow Cooker Cheddar Broccoli Soup

- 1 lb. chopped broccoli florets and stems , about 6 cups
- 3 cups vegetable broth
- 2 cups chopped carrots
- 1 cup chopped onions
- 1 clove garlic , minced
- 6 ounces sharp cheddar cheese , grated, 3 cups
- 2 ounces cream cheese , cut in small pieces
Place chopped broccoli, vegetable broth, carrots, onion and garlic in slow cooker. Top with cheddar cheese and cream cheese (do not stir in).
Cook on low 7-8 hours or on high 3-4 hours.
Using an immersion blender, puree soup until smooth. Garnish with additional shredded cheddar cheese and blanched broccoli florettes, if desired.
Makes 6 cups.
