Ingredients
  • 1 (4-5 lbs.) bone-in beef rib roast ,preferably center cut
  • 4 cloves garlic ,peeled and thinly sliced lengthwise
  • 1/2 cup chopped parsley
  • 1 Tbs. chopped fresh rosemary
  • 1 Tbs. chopped fresh sage leaves
  • 1 Tbs. chopped fresh thyme leaves
  • 1 Tbs. olive oil
  • 2 tsp. prepared horseradish
  • 1 tsp. kosher salt
  • 1/2 tsp. freshly ground black pepper
Instructions
  1. Preheat oven to 350F.
  2. Place beef in roasting pan. Using point of a paring knife, cut slits into roast and stuff slits with garlic slices.
  3. In small bowl combine parsley, rosemary, sage, thyme, olive oil, horseradish, kosher salt and pepper and press herb mixture over top of roast.

  4. Roast 15-20 minutes per pound or until meat thermometer reads 145F for medium rare.
  5. Let roast rest 10 minutes before carving.

Don't have fresh herbs on hand? You can easily substitute the same herb, dried, but reduce the amount to 1 teaspoon. Simply use:
