Balsamic Skillet Chicken

Busy weeknights call for easy skillet dinners made with simple on-hand ingredients. Balsamic Skillet Chicken smothered in an intensely flavored double tomato sauce is just that! All it takes are basics like an onion, garlic, balsamic vinegar, sundried tomatoes and a can of diced tomatoes….and chicken, of course. Balsamic Skillet Chicken also cooks in one pot for any easy weeknight meal.

Ingredients

  • 1 lb. boneless skinless chicken thighs
  • 1/2 tsp. dried basil ,divided
  • 1/2 tsp. kosher salt ,divided
  • 1/4 tsp. pepper ,divided
  • 1 Tbs. olive oil
  • 1 onion ,chopped, 1 cup
  • 1/4 cup sundried tomatoes ,chopped
  • 1 clove garlic ,minced
  • 1/4 cup balsamic vinegar
  • 1 can (14.5 ounces) diced tomatoes with basil and oregano
  • 2 Tbs. thinly sliced fresh basil leaves ,optional

Instructions

  • Season chicken with 1/4 tsp. basil, 1/4 tsp. kosher salt and 1/8 tsp. pepper.
  • Heat oil in large non-stick skillet and cook chicken until browned on all sides; reserve.
  • In same skillet cook onion, sundried tomatoes and garlic until just tender, stirring occasionally, 2-3 minutes.
  • Add balsamic vinegar and cook 1 minutes.
  • Stir in diced tomatoes with their juices and reserved chicken and bring to a boil.
  • Reduce heat and simmer until chicken is cooked through, about 15 minutes.
  • Garnish with sliced fresh basil, if desired
