Ingredients

  • 2 eggs
  • 1 avocado, pitted, peeled and sliced
  • 1/2 cup chopped tomato
  • 1 Tbs. lime juice
  • 1 Tbs. chopped cilantro
  • kosher salt to taste
  • pepper to taste

Instructions

  • Cook eggs in non-stick skillet over medium-high heat until desired doneness.
  • Arrange avocado, tomato and eggs on serving dishes.
  • Drizzle with lime juice and sprinkle with cilantro.
  • Season with salt and pepper, to taste.

Notes

Serve with lime wedges for an additional lime zing!
Recipe can be doubled and tripled!
