Creamy Chicken Pasta Recipe With Tomatoes And Basil

Creamy Chicken Pasta Recipe is an easy to make weeknight dinner. Pasta and chicken combine with a store-bought creamy cheesepasta sauce. Ingredients

  • 1 Tb. olive oil
  • 1 lb. boneless skinless chicken breasts, sliced in strips
  • 2 plum tomatoes, chopped, about 1 1/2 cups
  • 1 small onion, chopped, 1/2 cup
  • 1/2 cup sundried tomatoes, chopped
  • 1/2 tsp. dried basil
  • 1/2 tsp. kosher salt
  • 1/4 tsp. pepper
  • 1/2 cup white wine
  • 1 jar your favorite store bought creamy cheese sauce , such as Alfredo Sauce or Three Cheese Sauce
  • 8 ounces bowtie pasta, cooked and drained, reserving 1/4 cup pasta water
  • 1/4 cup thinly sliced fresh basil

Instructions

  • In large nonstick skillet over medium-high heat cook chicken until lightly browned; reserve.
  • In same skillet cook plum tomatoes, onion, sundried tomatoes, dried basil, salt and pepper until mixture is tender, 5-7 minutes, stirring occasionally.
  • Add wine; cook 1 minute.
  • Add cheese sauce and reserved chicken, stirring until combined.
  • Reduce heat to medium; simmer until chicken is cooked through and mixture is hot , 5-7 minutes. Add reserved 1/4 cup pasta water, if desired.
  • Toss sauce with cooked pasta until evenly coated. Top with fresh basil.

Notes

Yield: 8 cups; 4 servings.
