- 1 Tb. olive oil
- 1 lb. boneless skinless chicken breasts, sliced in strips
- 2 plum tomatoes, chopped, about 1 1/2 cups
- 1 small onion, chopped, 1/2 cup
- 1/2 cup sundried tomatoes, chopped
- 1/2 tsp. dried basil
- 1/2 tsp. kosher salt
- 1/4 tsp. pepper
- 1/2 cup white wine
- 1 jar your favorite store bought creamy cheese sauce , such as Alfredo Sauce or Three Cheese Sauce
- 8 ounces bowtie pasta, cooked and drained, reserving 1/4 cup pasta water
- 1/4 cup thinly sliced fresh basil
In large nonstick skillet over medium-high heat cook chicken until lightly browned; reserve.
In same skillet cook plum tomatoes, onion, sundried tomatoes, dried basil, salt and pepper until mixture is tender, 5-7 minutes, stirring occasionally.
Add wine; cook 1 minute.
Add cheese sauce and reserved chicken, stirring until combined.
Reduce heat to medium; simmer until chicken is cooked through and mixture is hot , 5-7 minutes. Add reserved 1/4 cup pasta water, if desired.
Toss sauce with cooked pasta until evenly coated. Top with fresh basil.
Yield: 8 cups; 4 servings.
