- 1 Tbs. olive oil
- 2 Tbs. butter, divided
- 3 red yellow and/or orange bell peppers, seeded and sliced, 3 cups
- 1 red onion, sliced, 1 cup
- 2 cloves garlic, thinly sliced
- ½ tsp. dried basil
- ½ tsp. kosher salt
- ¼ tsp. pepper
Melt olive oil and 1 Tablespoon butter in large non-stick skillet over medium-high heat. Cook peppers, onion, garlic, basil, kosher salt and pepper until tender-crisp, 10-12 minutes, stirring occasionally.
Stir in remaining 1 Tablespoon butter and serve.
