Lemon Basil Aioli:
- 1/3 cup mayonnaise
- 2 Tbsp. minced basil leaves
- 1 Tbsp. lemon zest
Bruschetta Burgers:
- 3 ounces sliced prosciutto, chopped
- 1 lb. ground beef
- ¼ cup chopped sundried tomatoes
- 4 hamburger rolls
- 4 green leaf lettuce leaves
Bruschetta Topping:
Combine chopped tomatoes, garlic, chopped basil, olive oil, vinegar, kosher salt and, if desired, red pepper flakes. Let stand.
Crispy Prosciutto Burgers:
Preheat grill for direct heat grilling.
Heat medium nonstick skillet over medium heat and cook chopped prosciutto until crispy, stirring occasionally; let cool.
Combine ground beef and sundried tomatoes. Reserve 1 heaping Tablespoon crispy prosciutto and stir remaining crispy prosciutto into ground beef mixture. Shape into 4 burgers.
Grill burgers to desired doneness, turning once.
Brush cut sides of rolls with Lemon Basil Aioli. Top bottom of roll with lettuce, burger, Bruschetta Topping, reserved crispy prosciutto and top of roll.
