Avocado Hummus

- 1 (15.5 ounces) can chickpeas, drained and rinsed
- 1 cup ripe avocado
- ¼ cup fresh lime juice
- 6 Tbs. cilantro leaves , divided
- 1 large clove garlic
- ½ tsp. kosher salt
- ¼ tsp. chipotle chili powder
Combine chickpeas, avocado, lime juice, 2 Tablespoons cilantro leaves, garlic, kosher salt and chili powder in a food processor and process until smooth and creamy.
Chop the remaining 4 Tablespoons cilantro.
Transfer the dip to a mortar and pestle or a serving bowl and top with top with the chopped cilantro.
Serve with your favorite vegetable dippers.
