Smothered Parmesan Panko Chicken
6 bone-in chicken thighs, about 3 lbs., skin removed
1 tsp. dried Italian seasoning, divided
1 tsp. kosher salt, divided
1/2 tsp. garlic powder
3 plum tomatoes, chopped, 1 1/2 cups
1 cup panko breadcrumbs
1/2 cup shredded Parmesan cheese
4 Tbs. olive oil, divided
1. Preheat oven to 425F.
2. Arrange chicken thighs in roasting pan or baking dish. Sprinkle with 1/2 tsp. Italian seasoning, 1/2 tsp. kosher salt and garlic powder.
3. Combine tomatoes, panko, Parmesan, 3 Tbs. olive oil and remaining 1/2 tsp. Italian seasoning and remaining 1/2 tsp. kosher salt. Spoon tomato mixture over chicken. Drizzle with remaining 1 Tbs. olive oil.
4. Bake 45 minutes or until topping is golden and chicken is cooked through and meat thermometer registers 165F.
