The flavors of Guinness, brown sugar and horseradish mustard will simmer in your slow cooker all day long and infuse your corned beef. Once you’re home just boil up the juices and make yourself a beautiful Guinness reduction to drizzle over your corned beef and mashed potatoes! The perfect ending to a perfectly Irish day!
Slow Cooker Corned Beef & Guinness Reduction
1 onion, chopped, 1 cup
3 cloves garlic, minced, about 1 Tbs.
3 lbs. corned beef brisket
1 bottle (12 oz.) Guinness stout beer
3/4 cup packed dark brown sugar
1/4 cup horseradish mustard
3 Tbs. flour
1. Place onion and garlic in slow cooker. Top with corned beef.
2. Combine Guinness, brown sugar and mustard. Pour over corned beef.
3. Cook 7-8 hours on low or 3-4 hours on high.
4. Remove corned beef from slow cooker. Transfer liquid to saucepot. Stir flour and 3 Tbs. cold water until smooth and blended. Stir into saucepot. Bring to a boil over medium-high heat. Reduce heat to low and simmer until slightly reduced and thickened, 5-7 minutes. Serve Guinness Reduction with corned beef.
