I’m quite certain that I’ve mentioned this to you before but it’s definitely worth another mention. Thanksgiving is my absolute favorite holiday! I look forward to this culinary feast all year long and a favorite part of my day is the mashed potatoes……creamy, buttery, silky, and now garlic-infused mashed potatoes. Did you know that garlic is packed with anti-oxidants, boosts the immune system and contains the compound allicin which has great medicinal properties? Garlic also is low in calories and very rich in Vitamin C, Vitamin B6 and Manganese and even contains trace amounts of various other nutrients, and helps to keep vampires at bay!
Creamy Garlic-Infused Mashed Potatoes
3 lbs. Yukon Gold potatoes, peeled and cut in chunks
6 cloves garlic, peeled and rough chopped in large pieces
4 ounces cream cheese, softened
4 Tbs. butter, melted
1 tsp. kosher salt
1/2 tsp. black pepper
1. Fill pot with potatoes, garlic and enough cold water to cover by 1-inch. Bring to a boil over medium-high heat. Boil 20 minutes or until tender. Drain, reserving 1/2 cup of the potato water.
2. Mash potato mixture with reserved potato water. Add cream cheese, butter, kosher salt and pepper. Continue mashing until smooth and creamy*.
3. Transfer to serving dish and top with additional melted butter, if desired.
Makes 6 cups/12 servings.
*Make Ahead: Mashed potatoes can be made ahead to this point and reheated in the oven in an oven-safe baking dish. Just top with dabs of additional butter, cover with foil and reheat! Even easier, just reheat in a microwave-safe bowl in the microwave!
