- 2 Tbs. red wine vinegar
- 2 Tbs. lime juice
- 1 tsp. lime zest
- 1 tsp. sugar
- 1 tsp. kosher salt
- 1/4 tsp. pepper
- 8 ounces (1 1/3 cups) orzo pasta, cooked, drained and cooled down with cold water
- 2 peaches, pitted and chopped, 2 cups
- 2 cups arugula
- 1 cup blueberries
